Micro greens are baby vegetables and legumes that are harvested at the seedling stage. In restaurants they are often served as tasty and nutritious salad dressings and garnishes. Some commonly eaten micro greens are Amaranths , Basil,  Beetroot,  Pok Choy Broccoli , brown Mustard, Celery, leaf Chia , Chinese cabbage , Chives Coriander (cilantro),Dill, Fennel , Fenugreek, Leek, Lettuce iceberg, Oregano, Parsley, Radish, Red Cabbage, Rocket, Rosemary, Sage, Spinach, Thyme, Yellow mustard


Some plants at this seedling stage possess incredible amounts of vitamins and minerals, making them a super-food. (The same is true of sprouts, which are seeds and beans that received just enough moisture to come out of the dormancy stage and send up shoots.) At this intensely energetic stage of the plant’s life, the micro greens can also be at their tastiest. I sampled a few bits of baby arugula that made my eyes water from their spiciness!

When I started Propagating micro green on trial basis, i got surprisingly good result as i had a previous experience in nursery and Landscaping of 30 yrs. When i Google for new thing i found Micro green is easy to produce as easy as well to market , though it has a limited market , but YES , its good business. You can sell these Micro greens can be sold to various cuisine restaurant like - Mexican , Italian , French ,Continental  Chinese , Spanish , Thai & so on  + corporate sector like Dominos , Pizza Hut , Subways etc...
